Operating out of an 1800 square foot commercial bakery on the backroads just outside of Huntsville, AL, Liberated currently provides 10 food options for those seeking special diets.  All of the food they manufacture is based on the "Specific Carbohydrate Diet" (SCD) and is:

Grain (and gluten) Free

Starch Free (no potato, tapioca, or other starches)

Vegetarian

Only sweetened with raw honey or fruit

Made without any genetically modified ingredients

Made with no artificial ingredients

Stacey Schlaman, Founder stated, "Our main inspiration for the company was to help provide food options for people suffering from auto-immune issues like Crohn's and Colitis, or those that had food allergies."

Schlaman had no idea how quickly or popular her food would become.  She continues, "I originally thought I'd be doing a little farmers market type of enterprise.  But six months after opening the doors, we had to start construction on an adjacent warehouse to keep up with the demand."
